Workouts: in-ride settings button no longer offers useful options

Win 11, latest version of FG, Kickr bike.

In v6 and earlier, the in-ride settings button for workouts offered options to change between ERG and SIM mode, and to change FTP. Both were very useful if a workout was proving too hard. Now these have disappeared and the options (slope scaling etc) are not ones I ever want to change in mid ride.
