Feature missing to adjust ride intensity

Previously I would select a ride that I thought was reasonable in length and élévations based on my ability, BUT I didn’t worry too much because there were settings I could use during the ride to modifier the difficulty. I can no longer see or access these drop downs. I hope you know what I mean as I don’t have a better explanation. The menus were accessible on the left side of the screen and settings could be adjusted thru up and down arrows.
